Patagonian & Antarctic Toothfish

Scientific Name: Dissostichus eleginoides, Dissostichus mawsoni

Common Names: FR: Légine Australe; EN: Patagonian Toothfish, Chilean Seabass; ZH: 南极犬牙鱼, 智利海鲈

Origin and Fishing Zone: Subantarctic waters of the French Exclusive Economic Zones (EEZ) around Kerguelen and Crozet islands (French Southern and Antarctic Lands - TAAF). Deep-sea fishing managed under CCAMLR (Commission for the Conservation of Antarctic Marine Living Resources) for adjacent areas.

All our toothfish are frozen on board immediately after capture, at very low temperature (< -40°C), guaranteeing optimal freshness, preserved texture and intact nutritional values. This ultra-fast process preserves cellular integrity and ensures consistent superior quality.

Technical and Commercial Characteristics

Fishing Method: Selective demersal longline in FAO zones 58 (TAAF: Kerguelen and Crozet islands), under strict quotas set by CCAMLR.

Seasonality: Regulated fishing with strict quotas to preserve stocks and limit environmental impact.

Certifications: MSC (Marine Stewardship Council) certified fishery. No GMOs, no irradiation.

Packaging: Variable weight cartons (19-22 kg) or bags depending on product. Frozen on board (< -40°C). Transport and storage: < -18°C. Shelf life: 24 months.

Scientific Name: Jasus paulensis

Common Names: FR: Langouste de Saint-Paul, Langouste Australe; EN: St. Paul Rock Lobster, Southern Spiny Lobster; ZH: 圣保罗岩龙虾

Origin and Fishing Zone: FAO 51 – Saint Paul and Amsterdam (France - TAAF). Pot-caught, frozen on board. Calibers: 100/150g, 150g+ (tails); 150/200g, 200/250g, 250/300g, 300/350g (whole).
